Orange & Almond Cake – gluten & dairy free

Ingredients

  • 3 large oranges
  • 420g caster sugar
  • 420g ground almonds
  • 8 free range eggs
  • 1tsp baking powder

Method

Place whole oranges into boiling water and simmer for 1 hour. Then remove and cool.

Beat eggs, sugar and baking powder until pale, light and fluffy. Beat in the almonds.

Place oranges into a food processor and pulp into a puree, removing any pips. Fold into batter and stand for 20 mins.

Pour into a baking tin and bake for 1hr 30 mins until golden brown. Test with a skewer to make sure it comes out clean.

Cool completely in the tin.

Mix icing sugar and orange juice and drizzle over the cake.
