Salsa Rossa

Ingredients

  • 1 large red pepper chargrilled
  • 1 tin chopped tomatoes
  • 2 cloves garlic sliced
  • tbsp oregano
  • 2 tbsp red wine vinegar
  • 50ml olive oil

Method

  1. Add oregano and garlic to red wine vinegar and olive oil.
  2. Peel chargrilled peppers and finely dice.
  3. Add to vinegar mix.
  4. Add chopped tomatoes.
  5. Slowly simmer for 1 ½ hours then leave to cool.
  6. Transfer to a container.
  7. Serve as required.
